Cookies are possibly my favourite sweet treat, mainly because you can easily skip the eggs in any recipe but because chocolatey goodness with a fudge-like texture? PERFECT. But it’s not all about chocolate goodness as it’s really easy to whip up a more healthy set ingredients, and even better, make them dairy-free and vegan.
Flora has recently released their own dairy-free spread which makes baking and cooking an absolute dream for those who want to easily substitute butter and spreads, and to coincide with the launch they’ve put together a few delicious recipes you can try in super-quick time to tingle the tastebuds of your family, friends and (most importantly) you! The website has loads of sweet treats and some savoury ideas on offer, but as I said, I’m a cookie gal so when I spotted this Oaty Cranberry and Coconut Crumbles recipe I wasted no time in getting all my ingredients together in a bowl for a weekend treat.
To make these yourself, all you need is:
- 75 g Flora Freedom
- 1 tbsp golden syrup (I used maple syrup made from carob)
- 75 g light soft brown sugar (easily substitute for coconut sugar)
- 75 g self raising flour
- 50 g porridge oats
- 25 g desiccated coconut
- 25 g dried cranberries
The actual process is pretty quick – simply melt the butter and syrup in a Bain Marie, and mix together in a bowl with all the remaining dry ingredients. Take a slightly heaped teaspoon of the mixture onto a parchment lined baking tray to make 12 cookies, and bake for 12-15 minutes (I would recommend baking for 10, and switching off the oven to continue cooking for 3 minutes max, but depends on how good your oven is.)
Even as a chocolate cookie fan, I can report these are crunchy yet soft, sweet yet edible without feeling overly sugary, and a delicious flavour combination – all whilst staying dairy free and delicious.
