Saturday, Saturday is a good day; the weekend is here, there’s lie-ins galore, and it’s a time to treat yourself outside the regular toast and cereal. With this Saturday being extra special to some – yes, all you love birds you – today is the perfect day to treat you and your significant other to a special breakfast in bed with the added bonus of it being dairy-free, filling and a bit sweet too – what more do you want?

French Toast is a classic dish for sweet breakfasts along with pancakes and waffles, but it’s got that savory edge you sometimes need with your morning meal so it’s a great recipe to mix up nuts, seeds, chocolate, honey, cinnamon and bananas to make the ultimate Vegan French Toast. It’s easy to whisk up, and makes a hefty amount to so over-indulge is welcome here…

Ingredients (serves 8)

2 Ripe Bananas | 3/4 Cup of Nut Milk | 1½ Tsp Cinnamon and Vanilla | Gluten/Wheat/Dairy Free Bread | Sugar

Optional Extras  Orange Zest | Honey | Granola | Chocolate Sauce

1. Mash up your bananas on a flat surface until all mushy and easy to blend. In a bowl or mixing jug, add in the milk, cinnamon and vanilla before whisking in the banana – make sure it has enough liquid for the bread to absorb.

2. Transfer the mix into a flat baking tray – preferably one for pies or brownies – and lay the bread across the mix to soak up the mix. Make sure you turn the bread over a few times, and then sprinkle some sugar on the upward-facing side.

3. On a pre-heated griddle or skillet, lay your bread sugar side down to cook and let it bubble away into a sweet caramel until brown. When it’s cooked underneath, sprinkle the uncooked side with sugar and flip over, it should look like a grilled sandwich but feel moist with a sugar bite.

4. When cooked through, transfer your bread into a nice stack and serve with a range of toppings – I went for Honey Quinoa Granola and Choc Shot Sauce (made from fruit, and totally vegan and free of any real chocolate!), and get stuck in!

Uh, heavenly! All that sweet, moist, bready goodness without the deep-frying, plus the fibre from the bread and banana will get you going in the morning and keep you full until lunchtime so that makes this indulgence all the more delicious – and neccessary to make, I mean, healthy French Toast,  when else can you get breakfast this good?

Treat yourself and your special someone this Valentine’s Day, and every Saturday afterwards because you deserve it! Seeing as my significant other according to Buzzfeed is myself, well, I’ll be making sure my tum is well loved with a double serving of these bad boys 😉
