Well we finally made it, it’s Christmas Eve. I imagine now that you’re heading home or spending time with loved ones, getting ready for the awesome roast dinner being dished up tomorrow, but if you’re panicking over what sides to have or a little after dinner treat to differentiate from the Quality Street, then here’s a quick round up of some of my recipes that are perfect for the last-minute cooks out there.
For a winter warmer to get you in the festive spirit, this Hot Spiced Apple is the perfect morning treat with your breakfast. All you need is apple juice, cinnamon and spices, easy to throw together and make in a big batch for the family.
Whether your looking for additional sides or a healthier alternative, my Vegan Nut Roast and Celeriac Mash are both crowd pleasers. Get your plate packed with flavour with a Christmas Spiced Nut Roast, and cut down on the starch with a lighter yet equally satisfying Celeriac mash – of course being last minute, you may not have some of the veggies or bread around, so substitute celeriac for parnsips or rye bread for your crusty loaf – easy-peasy and freshly homemade goodness.
For the sweet-tooth lovers out there who want something decadent without overdoing it, I’ve got the treats for you. For the chocolate lovers who need a little caffeine hit to last until the Doctor Who Christmas Special, my Sweet Potato Coffee Caramel Brownies will be a pure delight – and healthy enough for a second slice 😉 If a movie by the fire calls for a warming sweet drink, this Ultimate Vegan Hot Chocolate tastes amazing and will fill you up until Boxing Day breakfast. For something to make with the kids this evening and keep them happy after dinner through to boxing day, a batch of these Spiced Orange Cookies will keep them quite in front of the TV without the sugar crash. Set any of these down in front of the family on Christmas Day and you’ll be a true crowd pleaser.
As it’s Christmas, I will be taking the time to enjoy family company so might not be posting as often, but I wish you all a very Merry Christmas that’s full of love, joy, good food and wonderful presents and moments!
Lots of Love,
